Sunday Funday!

I attended to a Halloween Party last night.  There were cheese dips, pies, cookies, bagel dogs, candy and more!  Although temptation was everywhere – I found ways to accommodate my Paleo commitment.  I helped myself to some shrimp cocktail (minus the sauce), guacamole sans the chips, raw veggies and fruit.  I did it!
Football Sunday is also a challenge for me.  I am generally found in front of the TV with football friendly food on hand.  Today:  PALEO CHILI!
Paleo-Chili

2 lbs ground buffalo
1 cup chopped onion
3 cloves chopped garlic
2-4 Tbs fat
2 cups chopped tomatoes
4 Tbs chile powder
1 teaspoon dry oregano
1 teaspoon ground cumin
1 teaspoon salt
1 cup water
Add additional veggies per your liking: green pepper, red pepper, zucchini are yummy!

Brown ground buffalo with chopped onion and chopped garlic, in fat. Then add chopped tomatoes, chile powder, oregano, cumin, and salt. Add water, then simmer the mixture for at least two hours, until the meat is very tender and the tomatoes pretty much cook into the sauce. Four hours is not too much, but check to make sure it does not go dry.

    Shrimp, avocado, carrots, celery, cucumber
    Fruit: raspberries, blueberries, watermelon

  2. so last nite, id give myself a B in terms of paleo grades. went to stanley's before the game with all my buddies. had lite beer, so there is a fail, but did find some paleo things to eat on the menu, i.e. grilled pork chops. gave my sweet potato fries to my girlfriend because i was feeling guilty already from the booze.

    snack after game: banana

    back on track this am:

    breakfast: scrambled eggs, broccoli, green peppers, salsa, turkey bacon, coffee, banana.

    active rest day, soccer game later.

    post most later. seacrest out.

  3. Okay...so I am going to start posting what I ate the day before since that seems to make more sense. Otherwise I just have to come back later and update.

    Yesterday's/Saturday's menu:

    Breakfast: 2 eggs scrambled in a little olive oil. Table spoon of a salsa on top.

    (I thought the salsa was paleo until I looked closely at the ingredients...I will rectify this in the future by making my own)

    Snack: Banana and coffee flavored protein shake post WOD.

    Lunch: 1 Beef Sausage, veggies, pomegranate

    Snack: Fresh pineapple

    Dinner: Chicken lettuce wraps, frozen banana chips

  5. RAE- I think you were reading my mind! I was looking for a Paleo Chili recipe to make some Chili this week! Thanks!

    Here's my blog for Sat....kinda cheated (It's finals week! give me a break!)

    breakfast:
    gluten free cereal with almond milk
    a small handful of almonds

    snack: 1 nectarine

    lunch:
    left over 1/2 grilled chicken with green beans and eggplant

    dinner:
    jerk chicken salad from Earwax in wicker park (SO GOOD!)

    dessert:
    1 nectarine with a few almonds


    I would still like to try this coffee flavored protein before I buy it!!

  7. It's a good recipe - you can also use canned tomatoes (preferably organic). The ground buffalo is good but can be substituted with ground turkey or grass-fed ground beef no more than 90-10.

    The hubby and I are testing out a Paleo meatloaf recipe tonight and Paleo cookies this week...I'll keep ya'll posted!

    I am so game for chili now - I have a lb or so of grass fed lamb in the freezer and I think it's time for a little experiment.

    Good to see Tom on board too! Now I'm not the only dude in the mix haha ;)
