Chicken and Veggies, Chicken and Veggies, Blah and Boring, Chicken and Veggies

My eating habits have turned back to following Paleo more closely.  Although, I cannot lie and say that I did not enjoy the AB&J sandwiches, milkshakes and Girl Scout cookies I was devouring last week.  Mmmmm. 

As my life has slowed down for the moment, I realized that I was so sick & tired of grilled chicken with a side of broccoli.  But, after a long day at work, a CF workout and getting home rather late, the idea of concocting a multi-ingredient meal gave me a headache.  Why can’t chicken and veggies be more fun?! And by fun I mean FLAVORFUL.  With more time on my hands, Tuesday evening I decided to try out 2 new recipes I found on Every Day Paleo:  Pecan Crusted Chicken and Stuffed Eggplant (I added Asparagus to the Stuffed Eggplant)

I found both the chicken and the veggies to be delish!  Even more telling that they were tasty was the thumbs up I got from the hubby!  I also want to mention this: I totally could have prepared this after a long day at work and a CF workout.  On paper it looked intimidating but in reality the preparation was easy-peasy-lemon-squeezy.  No more recipe intimidation for this girl!

Challenge:  Drywall – I bet this is a Paleo meal that even you may like…I dare you!

  2. I have not been back to the box yet...? Won't be back crossfitting for another 4-7 weeks. But I do plan on popping by to say HI sometime next week!

    Maybe we are due for another Paleo Potluck?!

  3. That does look really good Rae! I always stick to the same foods though. I should branch out. Let us know what day you are stopping by the box. And yes, I think it is time for another Pot Luck. Mostly because I want some of Drywalls not-at-all Paleo fudge.


    Yatta, are you keeping track of your food? Going to back off the sunflower seeds today? :)

  5. rae, i love the everydaypaleo pecan crusted chicken. tried it about 2 months ago. superb. and you are right, easy like one of charlie sheen's lady friends.

    oh and a product review for those of you traveling, steve's original paleo kits (jerky, nuts, dried fruit) are rather delicious and saved me a lot of times on my recent excursion. his grainless granola is ok, but i think kelsey's recipe (which i add dried cherries) is way better. furthermore, his beef jerky sticks are not anything special. so if you are going to spend the dough, get the kits. otherwise, stick to trader joe's jerky because it has a lot less salt...yatta, im looking in your direction, get rid of those sunflower seeds! yatta, try out the paleo granola if you are looking for a snack...or dont and continue to roll on the floor sans mommy the next time you get a calf cramp.

". I was like damn she heals really fast, but I'm glad she is back! lol.

    @Camey I am keeping track, even if I am ashamed of my food log. I have to give it to Derek in a week:( Today I have not had any sunflower seeds only because I accidentally left them at home. Now I am twitching like a crack addict:(

    We can have the next Paleo potluck at my place if you guys want. Just throw out some dates.

    @Thom! lololol. Drywall is rubbing off on you because you just went in on me! lolol. I should have never disclosed that I still cry for my mommy:( But seriously, I am going to try and slow down the seeds. It is truly because I like having something in my mouth at all times. Keeps me from getting bored and I feel like it suppresses my appetite. It's usually gum or some type of nut. I will ask Kelsey for her granola recipe for sure. Thank you:)

    It used to be called the home economist, and it has a HUGE selection of nuts/trail mix, and for the trail mix they tell you exactly what the ingredients are.

  11. Yatta! Did you think you wouldn't get called out for saying that! LOL!

    As far as sunflower seeds go, you should stop eating them all day. There are abt 200 cals for 1/4 cup. Unless you are limiting your intake, that will add up fast. Although, still a better option than going to Panda for orange chicken, fried rice and an eggroll an hour before you do a WOD. ;)

  12. @Camey...I was doing too many things at once. I was not paying as much attention to how my words sounded:( Wont happen again! You freaks! :0)

    However, I really do like having stuff in my mouth to chew or suck on. I saw the calorie count for the seeds, but honestly it is hard to eat a lot of them. It is 1/4 a cup without the shell. That is a lot of sun flower seeds. I just like the activity of sucking all the salt off and de-shelling them. I will literally eat 1/4 cup all day and not snack on much else as a result.

    Trust, you wont see me eating orange chicken, beef and brocolli, egg roll, rice, lomein, AND a cinnamon roll with milk and hour before a WOD ever again. I almost puked that day:(

  13. @Yatta - how did you NOT puke?! That right there is impressive. Also, let's definitely get a Paleo Pot Luck on the calendar! I am out of town the weekend of 3/26, so try to not schedule then. :) Maybe there can be two buffet tables - the Paleo and the Faileo?!
