Almond Banana Pancakes

One word: YUMMMMM! I rarely cook or go outside my comfort zone when it come to paleo recipes, but when one of my friends told me about this, I couldn't help but try it out. These pancakes are so easy to make and actually taste good. Well, that is if you like almond butter and bananas.

I added dark chocolate chips to mine because its like having dessert for breakfast. :)

Here is the recipe:
  • 2 ripe bananas (I used only one the second time I made this)
  • 1 egg
  • 1 heaping tablespoon of almond butter

Instructions:

  • Mash the bananas, add the egg and mix well.
  • Stir in the almond butter, adding more than a tablespoon if you want a more pancake-like texture.
  • Warm butter in a pan and pour batter into small cakes.
  • Brown on each side and serve warm.

  5. Drywall, a couple of us were talking about your blog yesterday and mentioned the "Breast milk is paleo" post. One of the new girls was like "Breast milk is paleo! Gross!!" Poor girl!

    Tyler. thanks for showing me how to do double unders! Even though you had no idea you were helping me. :) But I had an ah hah! moment. I needed less spaz and faster hands. At the end of class I did 20 in a row. Just like that!

    If any of you like root vegetable soups, you should check this one out. My sis made if for the fam over xmas and it passed muster. I made it over the weekend and have been eating it w/ meat and a little heavy cream for some extra fat. i used more than the recommended 3 cups of chicken stock.

  7. I just totally demolished a montrosity of a cupcake from this new place called Crumbs. I mean it was effing huge. It had butter cream in the middle and icing on the outside topped with a layer of M&Ms.

    Drywall am I making you proud? lol.

  8. Camey - I told Jenn that I was going to write a piece on breast milk and she had the same reaction.

    Yatta - I would recommend washing it down with a late afternoon coffee and Baileys. Great snack choice though.

    Tyler - next time you make that soup, pour a shot of light rum in the bowl and let me know how it tastes. I'm still working on that perfect booze soup recipe.



    On a serious note, my legs are still pretty sore, but I think they're mostly functional at this point. The fact that I did pretty well at Karen but my legs felt so absolutely destroyed afterward got me thinking about ability vs recovery and the frequency at which you do certain workouts.

    Things that I put extra work into (chest with bench press, back with dead hang pullups and rows, hamstrings with GH raises), never get painfully sore after days that we work the hell out of them. But because so many things we do are lower body focused, I never felt the need to do extra quad/squat work. But I have to say, based upon how my legs have felt over the last 3 days, I think we do less quad concentrated work then I realized.

    I'm considering making some sort of random air squat regiment (tabata, 100 for time, 2 min AMRAP, etc) a once a week thing, maybe a post WOD on Saturdays. Not because I'm obsessed with killing air squats, but because I think if my legs were used to it on a once a week basis, I'd never have this level of soreness again. I'm sure there'll be some performance benefit too, but if 2-4 minutes of quad killing a week meant no more 4 day soreness, that's a tradeoff I'd be willing to make.

    Just curious what you guys think.
